I have had a really, REALLY productive day. I woke up and cleaned my house, which is my least favorite activity, but when you’re allergic to dust cleaning is essential. I did laundry and then…the master piece of the day. First let me clarify I am NOT a house wife, no kids and not married…yet. So for the most part I don’t cook. But today I felt the need to cook. Another side note, (and this may be the REAL reason I don’t cook), I only cook from scratch (no boxes or cans allowed), all fresh ingredients. I had this great illogical desire to cook spaghetti squash (yeah, I don’t know why either). So tonight I made Kale cooked down in garlic and lemon juice served with shrimp cooked in a garlic butter and Chardonnay sauce on top of spaghetti squash (my alternative to pasta). It was so delicious. But here’s the best part it was HEALTHY. What’s my point? It was time consuming. Many times we (me included) don’t do what’s right (healthy) because wrong (unhealthy) is usually easier. We don’t cook because cooking right is time consuming. We lie because the truth might hurt. We cut corners to get the job done faster. We choose wrong because it is EASY. Today my mom and my brother could not stop raving about how delicious everything was. This made the hour and a half cooking time completely worth it. Nothing worth having comes easy. Instead of taking the easy way, take the RIGHT one. It’s time consuming and often unpopular, but the results are ALWAYS worth it.
“Let us not become weary in doing good, for at the proper time we will reap a harvest if we do not give up” ( Galatians 6:9).
So what am I thankful for today? 🙂 Spaghetti squash.
